Restaurant Duty Manager (b003)

A well-established wine estate in Franschhoek seeks to employ an experienced Restaurant Duty Manager.

Minimum Requirements
• Grade 12
• Minimum 5 years’ experience in a restaurant
• Previous experience in a F&B Supervisory role mandatory.
• Knowledge of Restaurant operations

• Outlet standards and SOP’s are followed
• Ensure products to guests are quality controlled, checked and consistent
• 100% Management of complaints
• Ensure all aspects of the floor are in line with standards.
• Checks sell by dates, table set up and preparation are in line with standards
• Ensure retail is organised and stocked for following day .
• Adhere to the OSH Act .
• Ensure all areas and equipment are clean and hygienic and motivate staff to do the same
• Upselling to increase revenue and profitability
• Record and manage breakages
• Manage stock by the FIFO principal and keep stock holding at a min
• Cash up waitrons daily as well as the daily handover with financial info to be mailed
• Daily reports are completed timeously and accurately.
• Strong knowledge of food and beverage menus
• Ensure you know the POS
• Deal with all staff requests and issues in a sensitive fair and respectful manner
• Training, coaching, mentoring and guidance of staff.
